Easy Glazed Carrots

Mr. Smith loves glazed carrots...so this is for you honey :)

1 lb baby carrots
4 Tbsp butter
1/4 c honey

Cook carrots in boiling salted water about 20 to 30 minutes, or until tender.
Drain.
Let stand a few minutes to dry.
Melt butter in pan.
Add honey to pan.
When well blended, add carrots and cook slowly until browned and well glazed.
Turn vegetables occasionally for an even glaze.

Girl's Best Friend

     I know it's been said that "Diamonds Are A Girl's Best Friend", but I believe differently.  Especially when you have a Crock Pot/Slow Cooker, which is a "Girl's Second Best Friend".  I have a vintage"Rival Crock Pot" that was given to me by my mom when I moved into my own apartment after college.  Although it is probably about thirty years old it still works!!  I still use this one despite the fact that the insert doesn't come out and sometimes it is hard to wash, but I just can't seem to part with it...maybe because my mom gave it to me or because it still works like new! !


Recently, Mr Smith gave me a gift of a new "Kenmore Slow Cooker"

This Slow Cooker/Crock Pot is definitely bigger than the Rival,  the insert can be taken out and washed which I love, it has a keep warm setting the Rival only had a low and high setting, and you can make more food in the Kenmore.
In my Crock Pot/Slow Cooker, I have made:  beef roast, pork roast, turkey legs, whole roaster chicken, beef and pork ribs, chicken breast, chicken legs, sometimes I will even throw some white or sweet potatoes in with the meat, and chili.  Everything turns out moist, juicy, and tender.  
I use the Crock Pot/Slow Cooker because it is so easy to put the meat in add your seasonings, onions, garlic, and a little water set it on low and go about your day and when you come home, all you have to do is make a side of rice and vegetables and your meal is ready... no hard work as opposed to putting the same beef roast or whole roaster chicken in the oven and have to keep checking on it to see if it is done.  
I love both my Rival Crock Pot and my Kenmore Slow Cooker, they make my life much easier, and our food much tastier!!!!

Fabulously Delicious Chicken Potpie

     Mr. Smith and I always use to buy frozen potpies; then one day I found this recipe in my "one day I want to make this" file and decided to make it.  I added the mushrooms and vegetables to the recipe ... we haven't bought the frozen pies again.  This dish is Fabulously Delicious Chicken Potpie


1/2 medium onion
1 cup fresh sliced mushrooms 
1 cup frozen corn, carrots, peas
1 1/2 teaspoons butter
2 1/2 cups chopped cooked chicken (I cooked skinless/boneless chicken breast in the slow cooker the night before or you can buy a whole chicken from the market)
1 can cream of chicken soup
1 cup sour cream
1/2 cup milk
1 cup shredded mild Cheddar cheese, divided
1 (10 count)can ready-to-bake refrigerated biscuits


1.  Preheat oven to 350 degrees.  Grease the bottom and sides of an 11 by 7 inch baking dish.


2.  Chop the onion and mushrooms.  Heat butter in a small nonstick skillet over medium-high heat until melted.  Stir in onion and mushrooms.  Saute until tender.




3.  Combine onion, mushrooms, vegetables, chicken, soup, sour cream, and milk in a large bowl and mix well. 


Spoon  mixture into prepared baking dish.  Bake for 15 minutes.  Remove from oven.


4.  Sprinkle baked layer with 3/4 cup of the Cheddar cheese.  Arrange biscuits in single layer over top.  Sprinkle with remaining Cheddar.


5.  Bake until biscuits are golden brown and the sauce is bubbly, about 20 minutes longer.  Serve immediately.
